Ingredients for Gingerbread Men:

• 3 cups (390 grams) all purpose flour

• 1/2 teaspoon salt

• 3/4 teaspoon baking soda

• 2 teaspoons ground ginger

• 1 teaspoon ground cinnamon

• 1/4 teaspoon ground nutmeg

• 1/4 teaspoon ground cloves

• 1/2 cup (113 grams) unsalted butter, room temperature

• 1/2 cup (100 grams) granulated white sugar

• 1 large egg

• 2/3 cup (160 ml) unsulphured molasses (To prevent molasses from sticking to the measuring cup, first spray the cup with a non stick vegetable spray.)

Ingredients for Confectioners Frosting:

• 2 cups (230 grams) confectioners sugar (icing or powdered sugar), sifted

• 1/2 cup (113 grams) unsalted butter, room temperature

• 1 teaspoon pure vanilla extract

• 1 1/2 tablespoons milk or light cream


Gingerbread Men:

• Sift or whisk together the flour, salt, baking soda, and spices in a large bowl. 

• With a hand or electric mixer, beat the butter and sugar together until light and fluffy. Add the egg and molasses and beat until well combined, then slowly add the flour mixture. Continue beating until mixed

• Divide the dough in half, and wrap each in plastic wrap and refrigerate until it is firm. This can take two hours or even be left overnight. 

• Preheat the oven to 350 degrees F or 177 degrees C. Using parchment paper, line 2 baking sheets.

• Lightly dust a table surface with flour and roll out the dough to a thickness of about 1/4 inch. Use a gingerbread cutter to cut out the cookie shape from the dough. Carefully lift the cookies onto the baking sheet, about 1 inch apart.

• Bake for approximately 8 - 12 minutes until the cookies are firm and the edges lightly browned.

Confectioners Frosting: 

• In an electric or with a hand mixer, beat the butter until blended and smooth. 

• Add the vanilla extract and, on low speed, slowly beat in the sugar. 

• Add the milk and beat on high speed for about 3-4 minutes until the frosting is fluffy. More milk may be added as needed 

• Tint the frosting with your preferred food color. Use a pastry bag to decorate the gingerbread men!
